Ingredients for 5 servings:

  • 500 g flour (whole wheat flour)
  • ½ pack of yeast
  • 300 ml milk
  • some honey
  • ½ tbsp salt
  • some bread spice mix, ground
  • some flour to work with
  • some water for brushing
  • e.g. seeds (poppy, caraway, sesame, linseed)
  • n. B. Salt, coarse
  • e.g. sunflower seeds

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Put the flour in a bowl and add the spices. Dissolve the yeast in the milk and then add it to the flour, kneading everything into a dough. Knead the dough well on the work surface and punch it down. Then, cover the dough and set it in a warm place and let it rise for 30 minutes. I always put the dough in a metal bowl and put it in the oven at 50°C. After 30 minutes, you can divide the dough into 20 equal pieces and process or shape them as desired. You can find instructions online for various ways of shaping the dough. Then brush the pastry with water or egg. If you like, you can also sprinkle it with poppy seeds, sesame seeds, caraway seeds, linseed, coarse salt, etc. Then bake the pastry for about 15 minutes at 220°C (top and bottom heat). To ensure that the baked goods become nice and soft or stay soft for a longer time, you can place a metal bowl (or other ovenproof dish) with water in the oven under the baking tray while baking.
