Ingredients for 20 servings:

  • 1 kg flour (whole wheat flour)
  • 1 cube of yeast
  • 20 g salt
  • 500 ml buttermilk, lukewarm
  • 100 ml water, approx., warm
  • 20 g butter
  • 1 tsp honey

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Knead all ingredients together thoroughly, preferably with a mixer, until you have a smooth, supple dough. Let the dough rise in a warm place until it has doubled in size. Knead again and form approximately 20-25 rolls. Place them on a baking sheet lined with baking paper, cut lengthwise with a sharp knife, and cover with a cloth. Let rise for another 20 minutes. Preheat the oven to 200°C (fan/convection oven), place a bowl of water on the floor of the oven. Spray the dough pieces with water, place them in the oven, and bake for approximately 20-25 minutes. You can also sprinkle various seeds, grains, oat flakes, caraway seeds, or cheese on the rolls before baking.
