Whoopie Pies

Ingredients for 1 servings:

  • 100 g powdered sugar
  • 200 g butter, soft
  • 300 g flour
  • 1 pinch(s) of baking powder
  • 5 egg yolks
  • 20 g cocoa, unsweetened
  • 3 tbsp chocolate shavings
  • 100 g cream cheese
  • 30 g powdered sugar
  • 2 tbsp juice or syrup (raspberry, strawberry or blueberry flavor)
  • possibly food coloring
  • possibly powdered sugar, for dusting

Working time approx. 35 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Cream together very soft butter, 100g powdered sugar, and about 3 tablespoons of chocolate shavings. In another bowl, mix together the flour, baking powder, and cocoa powder. Gradually add the egg yolks and mix into the butter mixture. The batter should have the consistency of a sponge cake. Line a baking sheet with baking paper. Pipe the batter in portions onto the baking paper using a piping nozzle or a spoon. It’s better to pipe them vertically rather than horizontally, as they tend to spread. Bake the batter blobs for about 10 minutes in a preheated oven at 200°C (top and bottom heat). The cookies should not be hard, but not too soft either. While the whoopie pies are in the oven, prepare the filling. Mix the cream cheese with the powdered sugar and gradually add the syrup or juice. If you want a more vibrant color, you can simply add food coloring (powder) or more juice/syrup (but be careful not to make the mixture too runny). Then refrigerate the filling. Let the cookies cool, stacking two of the same size together. Once cooled, spread the filling on one half with a spoon or piping bag, then top with the other half. If desired, you can dust the whoopie pies with a little powdered sugar.
