Wild boar ham sauce à la Gabi

Ingredients for 4 servings:

  • 120 g porcini mushrooms, fresh or 50 g dried
  • possibly water, warm for soaking
  • 1 onion(s), finely diced
  • 1 carrot(s), finely diced
  • 200 g ham (wild boar ham), diced
  • 40 g bacon, diced
  • 4 tbsp olive oil
  • 30 g butter
  • salt and pepper
  • 0.38 liters of red wine
  • 2 cl grappa
  • optionally cheese (Pecorino), freshly grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Clean and slice fresh porcini mushrooms. Soak dried mushrooms in warm water and drain. Heat oil and butter in a pan, brown the onion, carrot, ham, and bacon. Add the mushrooms, season with salt and pepper, and pour in the red wine and grappa. Simmer for 15 minutes. Tip: Mix the sauce with freshly grated pecorino cheese.
