Ingredients for 16 servings:

  • 4 ½ kg cherry(s) (wild cherries)
  • 500 ml cherry juice
  • 5 pkt. gelling sugar, 1:1
  • Cherry liqueur, 3 ladles full

Instructions

Working time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 15 minutes

with liqueur, for 16 glasses

Pit the cherries and place them in a large saucepan with the cherry juice. The pan should be about half full, as foam will form during cooking, so the mixture shouldn’t overflow. Stir in the gelling sugar and blend with a hand blender until it’s not a uniform mass, but still contains chunks. Bring the mixture to a boil, then add the liqueur. Simmer for 5-10 minutes and pour into glasses while still hot.
