Wild garlic and mushroom cream

Ingredients for 4 servings:

  • 65 g wild garlic, fresh
  • 2 m.-sized onion(s)
  • 1 clove(s) garlic
  • 50 ml white wine, dry or broth
  • 150 g cream
  • 250 g mushrooms, fresh
  • 2 tbsp butter
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Pasta with spring greetings

Peel and finely dice the onions and garlic. Sort and wash the wild garlic, spin dry, and finely chop. Clean and slice the mushrooms. Melt the butter in a saucepan and sauté the onions and garlic over medium heat. Add the mushrooms and sauté for 3-4 minutes. Deglaze the mushroom mixture with wine (or stock). Then add the cream and bring to a boil. Stir in the wild garlic and season the sauce with salt and pepper to taste. Serve with freshly cooked pasta.
