Wild garlic hummus

Ingredients for 4 servings:

  • 1 can chickpeas (approx. 400 g drained weight)
  • 1 bunch wild garlic, fresh
  • 1 lime(s) (organic), zest and juice
  • 2 tbsp cumin
  • 2 tbsp sesame paste (tahini)
  • 4 tbsp olive oil
  • 2 chili peppers, dried
  • 1 tbsp paprika powder
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

great dip for vegetables, meat or bread

Drain the chickpeas and reserve the broth. Roughly chop a few wild garlic leaves and set aside. Blend all ingredients together, adding a little more chickpea broth if desired. Season generously with salt and pepper, and stir in the chopped wild garlic leaves. Enjoy immediately or pour into jars and cover with olive oil. It will keep in the refrigerator for about 4 weeks.
