Ingredients for 1 servings:
- 250 g margarine, vegan (e.g. Alsan), at room temperature
- 220 g raw cane sugar
- 1 pinch of salt (rock salt)
- 4 tbsp vanilla sugar
- 410 g spelt flour, wholemeal
- 1 pack of cream of tartar baking powder
- 2 tsp lemon juice
- 315 ml milk (oat milk), homemade
- 7 apples
- 200 g almond flakes
- possibly hazelnuts or almonds or raisins
- possibly cinnamon powder
- 60 g oat flakes
- 600 ml water

vegan Thermomix recipe for one tray
For the oat milk, mix 60g of oats and 600ml of water for 1 minute on speed 10. Drain through a fine sieve and measure 315ml for the cake. Use the leftovers from the sieve in the cake! Add the Alsan, sugar, and salt to the mixing bowl. Mix for 20 seconds on speed 5 until smooth. Add the flour, baking powder, lemon, the oat milk, and the leftovers from the preparation. If desired, you can add hazelnuts, almonds, or raisins to the dough. Knead for 3 minutes. Spread the dough onto a baking sheet lined with baking paper. The mixing bowl does not need to be rinsed. Core the apples and add them, peeled on, to the mixing bowl. Grate into pieces for approx. 3-5 seconds on speed 5. Spread the apple pieces over the dough. Sprinkle with the almond flakes. If desired, you can also add hazelnuts and raisins here. Bake in the oven on the middle rack at 170°C top/bottom heat for about 50 minutes.
