Wild garlic mashed potatoes

Ingredients for 4 servings:

  • 2 handfuls of wild garlic leaves
  • 1 kg potato(s), floury
  • 50 ml cream
  • 150 ml milk
  • 2 small onions
  • 1 tbsp herb butter (wild garlic butter)
  • salt and pepper
  • possibly nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

a delicious side dish to meat or steamed vegetables

Finely slice the wild garlic and dice the onions. Melt the butter in a pan and sauté the wild garlic leaves and onions. Peel the potatoes, boil them in salted water until soft, drain, and transfer them to a bowl. Add the milk and cream and mash the potatoes. Add the wild garlic and onion mixture to the mashed potatoes, stir in, and season with salt, pepper, and nutmeg, if desired.
