Wild garlic pancakes / wild garlic fritters

Ingredients for 4 servings:

  • 5 eggs
  • 250 ml milk
  • 120 g flour
  • Salt
  • 1 bunch wild garlic, roughly chopped
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the flour with the eggs, milk, and salt to form a smooth batter. Let it swell for about 15 minutes. Then stir in the wild garlic. Heat a little oil in a large pan and cook thin pancakes. Wild garlic pancakes are delicious with asparagus and hollandaise sauce or a light sauce. Cut leftover wild garlic pancakes into thin strips and use them as a soup garnish (wild garlic fritters). The pancake strips can easily be frozen and then thawed in hot broth.
