Ingredients for 1 servings:

  • 100 g wild garlic
  • 1 kg salt

Instructions

Working time approx. 15 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 15 minutes

Put the wild garlic through a meat grinder or puree it with a hand blender. Blend the wild garlic and approximately 100g of salt thoroughly in a blender until a relatively liquid paste forms. Then mix it in a bowl with the remaining salt. Spread it out on a baking sheet lined with kitchen paper and dry it outdoors. This will take about 8 hours on a sunny day. Under no circumstances should you dry it indoors; the sulfurous smell is so unbearable.
