Ingredients for 6 servings:

  • 400 g wine cheese, French or Bavarian, alternatively other red culture cheese (e.g. Munster or Limburger)
  • 3 large onions
  • 100 ml vinegar, wine-spiced (e.g. Altmeister)
  • 100 ml water
  • 50 ml sunflower oil
  • 4 tsp sugar
  • 1 tsp Maggi
  • 1 tsp caraway seeds
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Red culture cheese with onions in a vinegar marinade

Slice or slice the onions into thin (half) rings. Mix the vinegar, water, Maggi, sugar, and caraway seeds. Season with salt and pepper. Whisk in the oil. Slice the cheese, layer them with the onions in a dish, and pour the marinade over them. Let it marinate for at least an hour, or ideally overnight. Serve with farmhouse bread or baguette. Tip: For spicy onions, or if you want to keep the cheese for another day or two, briefly boil the onion rings in the marinade. Immediately remove the pan from the heat. Allow the onions and marinade to cool completely before marinating the cheese.
