Winter salad with apple, orange and celery

Ingredients for 2 servings:

  • 1 orange(s)
  • ½ large apple
  • 2 stalk(s) celeriac
  • 1 handful of arugula
  • 1 piece(s) cucumber(s), approx. 7 cm
  • 1 tbsp lemon juice
  • 1 tbsp salad cream
  • 1 tbsp natural yogurt, 1.5% fat
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • some orange pepper or lemon pepper, from the mill
  • 2 tsp pumpkin seeds, roasted

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Generously peel and fillet the orange over a bowl, reserving the juice. Squeeze out a little of the remaining flesh. Peel the apple and dice. Wash, trim, and finely chop the arugula. Peel, quarter, and thickly slice the cucumber. Wash and slice the celery. Mix the salad cream, lemon juice, and yogurt with the juice. Season with a pinch of sugar, salt, and orange pepper (lemon pepper also works). Add the prepared salad ingredients and mix well. Serve on plates and sprinkle with pumpkin seeds. Serves as a starter for 2-4 people, depending on your appetite and menu. Served with some bread and, for example, roasted chicken breast, it makes a light main course for two.
