For the puff pastry with sheep cheese:

  • 1 packet Puff pastry
  • 250 g Sheep cheese
  • 1 Pc. Garlic cloves chopped
  • 0,5 Pc. Chopped onion
  • 30 g Chopped herbs
  • 1 pinch Salt and pepper
  • 200 ml Cream

For the warm salad:

  • 500 g Arugula
  • 200 g Cherry tomatoes
  • 100 g Sheep cheese
  • 0,5 Pc. Chopped onion
  • 300 g Mushrooms
  • 1 pinch Salt and pepper
  • 20 g Butter

For the variations of melon:

  • 0,25 Pc. Watermelon
  • 250 g Sheep cheese
  • 0,5 Pc. Honeydew melon
  • 15 Pc. Serrano ham slices
  1. First prepare the filling for the puff pastry. To do this, mash the sheep’s cheese in a bowl with a fork and mix with the cream, onions, garlic and spices. Then spread out the puff pastry and spread thinly with the filling. Then roll the puff pastry and cut into pieces approx. 5 cm wide. Then brush the puff pastry with a little water. Bake at 180 degrees for about 15 minutes until golden brown.
  1. Core the honeydew melon and then cut into approx. 3 cm thick slices. Wrap the slices with Serrano ham and serve with fresh milled pepper.
  1. Shape the watermelon into half balls with a small spoon. Cut the sheep’s cheese into small cubes and drape the melon on top.
  1. Chop the ingredients for the warm salad and mix everything together.
