Ingredients for 4 servings:

  • 1 bunch woodruff
  • 500 ml water
  • 6 sheets of gelatin
  • 1 dashes lemon(s)
  • 60 g sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 3 hours 35 minutes

Let the woodruff wilt overnight, for example, by hanging it up or spreading it out on a cloth. Bring the water and sugar to a boil, remove from the heat, and add the woodruff. Let it steep for about 20 minutes, discard the woodruff, add a squeeze of lemon juice, add the squeezed gelatin, stir, and you’re done. Pour the mixture into jars and refrigerate. The jelly needs at least three hours to set. It goes deliciously with cream or vanilla sauce.
