Woodruff-rosemary syrup

Ingredients for 1 servings:

  • 2 stalks of woodruff
  • 1 tsp, heaped rosemary
  • 500 ml water
  • 500 g sugar

Let the fresh woodruff wilt for a day or put it in the freezer for 2-3 hours. Only then does it acquire its typical woodruff taste and aroma. Bring 500g of sugar to a boil in a saucepan with 500ml of water. When it starts to boil, add the woodruff and reduce the heat so that it is only simmering gently. Let the whole thing simmer for about 2-3 minutes, then set it aside. Add the rosemary and let it steep. If you add the rosemary to the boiling liquid, it can become bitter. Simply let everything cool and pour it through a sieve into a container; it stores well in the refrigerator. Tastes delicious with fresh strawberries. Simply quarter the strawberries and add the woodruff-rosemary syrup as desired.
