World's best lemon cream ice cream

Ingredients for 4 servings:

  • 500 g Skyr
  • 2 small lemons, organic or untreated
  • 4 dashes liquid sweetener
  • 10 mint leaves, fresh
  • some mineral water approx. 100 ml

Instructions

Grate the lemon zest from both fruits with a kitchen grater and squeeze the lemons. Whisk together the sweetener, lemon juice, and zest with the skyr. Finely chop the mint and fold it in. Mix the mixture with a little mineral water (100 ml is sufficient), but do not overbeat. The result should be homogeneous and similar in consistency to pancake batter. Either a) freeze the mixture in an ice cream maker according to the appliance’s instructions, stirring continuously, or b) place it in a bowl in the ice cream compartment/freezer and stir regularly, about every hour, until smooth, until the desired consistency is reached. Honey (about 2 tablespoons) tastes heavenly instead of the sweetener. Preparation time in an ice cream maker with its own compressor is about 45 minutes.
