World's best muesli cookies

Ingredients for 1 servings:

  • 250 g butter, soft
  • 200 g oat flakes, wholegrain
  • 200 g hazelnuts, chopped or almonds, sunflower seeds or sesame or mixed
  • 50 g raisins
  • 100 g desiccated coconut
  • 175 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 50 g whole wheat flour
  • 1 tsp baking powder
  • 100 g chocolate coating

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Makes about 80 pieces.

Mix all ingredients (except the chocolate coating) together. This will produce a slightly sticky dough. You can also use 400g of muesli instead of the oats and nuts. Using 2 teaspoons, place small heaps of the cookies onto 2-3 baking sheets and bake at 180°C (top/bottom heat) for about 15 minutes, until the edges are browned. Then let cool on a wire rack. The cookies will be quite soft but will firm up once cooled. Brush with chocolate coating to taste.
