Ingredients for 1 servings:

  • 450 g low-fat curd cheese
  • 5 eggs
  • 250 g oat bran
  • 40 g pumpkin seeds, peeled
  • 30 g sesame seeds
  • 30 g sunflower seeds
  • 50 g sunflower seeds, ground
  • 20 g hard cheese (Grana Padano) or Parmesan, freshly grated
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 m.-sized carrot(s), grated
  • 20 g flaxseed meal
  • Butter and flour for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

simple and delicious

Combine all ingredients in a large bowl and mix with a whisk, wooden spoon, or silicone spatula. A hand mixer is not necessary. Pour the batter into a buttered and floured loaf pan, as the high egg content will cause it to stick to the pan. Pour in the batter and smooth it slightly. Bake at 200°C (400°F) top/bottom heat for about 1 hour. Let rest in the closed oven for another 10 minutes.
