Wraps with zucchini filling and garlic yogurt

Ingredients for 2 servings:

  • 4 wraps
  • 150 g yogurt, 3.5% fat, set
  • 2 tbsp cream, optional
  • 2 cloves garlic
  • 2 tbsp green olives, pitted
  • e.g. salt and pepper
  • 2 small zucchini
  • 2 bell peppers
  • 6 tbsp tomato paste
  • 2 tbsp spring onions
  • 1 sprig(s) thyme, fresh, chopped
  • 1 sprig(s) oregano, fresh, chopped
  • 1 sprig(s) rosemary, fresh, chopped
  • some chili
  • e.g. salt and pepper
  • 1 cup water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

For the dip, chop the olives, mince the garlic, and mix with the remaining ingredients. Season to taste and chill. For the filling, wash, trim, and chop the zucchini, spring onions, and bell peppers. Sauté or fry the vegetables and deglaze with a small splash of water. Add the tomato paste and herbs and simmer briefly. Season to taste with chili, salt, and pepper. Place the wraps, dip, and vegetable filling on the table so everyone can fill and wrap their own wrap with dip and vegetables.
