Yeast braids – incredibly fluffy

Ingredients for 8 servings:

  • 500 g flour
  • 250 ml milk
  • 75 g butter
  • 21 g yeast, fresh
  • 2 egg yolks
  • 75 g sugar
  • 1 pinch of salt

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Heat the milk, melt the butter, and mix the yeast with a little milk until creamy. Mix the remaining milk with the lukewarm butter, egg yolk, and sugar. Season the flour with a good pinch of salt. Combine the milk mixture with the flour in a mixing bowl. Finally, add the yeast mixture. Whisk briefly and vigorously, let it rise until tripled in volume, then whisk again and let it rise until tripled in volume again. Now form plaits and let it rise until doubled in volume. Brush with egg and milk, decorate with poppy seeds, almond flakes, or granulated sugar. Bake for 15-20 minutes at 170°C in a fan-assisted oven or 180-185°C in a conventional oven.
