Ingredients for 1 servings:
- 500 g flour or spelt flour
- 100 g butter, soft
- 75 g sugar
- 250 ml milk
- 3 egg yolks
- 42 g yeast
- ¼ tsp salt
- some lemon peel, grated
- 150 g butter

- 1 liter of milk
- 125 g sugar
- 3 packs of pudding powder, vanilla or cream
- 6 sheets of gelatine, or 1 pack
- 400 g whipped cream
- 1 packet of vanilla sugar
- 30 ml milk
- 1 tsp sugar
- some powdered sugar
Instructions
Working time approx. 40 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 25 minutes; Total time approx. 5 hours 5 minutes
for 1 baking tray
Sift the flour into a large bowl. Make a well in the center and mix the yeast with a little sugar and a little lukewarm milk to make a small starter dough. Dust with a pinch of flour, cover and let stand in a warm place for about 20 minutes. Then add the remaining lukewarm milk, salt, sugar, softened butter, egg yolk and lemon zest. Knead the dough until elastic and smooth. By hand for about 10 minutes, or less with a food processor. Cover again and let rise in a warm place until the dough has doubled in size. For the crumble, melt the fat and knead it with the flour and sugar until crumbly. Now knead the yeast dough again vigorously on a floured work surface. Then roll out the yeast dough and place it on a greased baking sheet. Prick the dough several times with a fork. Mix 30 ml of milk with 1 teaspoon of sugar and brush the mixture onto the yeast dough and top with the crumble. Bake the yeast dough in a preheated oven at 200°C for about 20-25 minutes until golden yellow to light golden brown, then let cool. Make a pudding from the milk, pudding powder, and sugar. Stir the softened gelatin into the still-hot pudding and chill, but do not allow it to set. (You can omit the gelatin on cold days, but use cream stabilizer instead.) When the pudding is cold, carefully stir in the cream whipped with vanilla sugar. Once the yeast dough has cooled, cut it in half crosswise, spread with pudding cream, and top with sprinkles. Dust with powdered sugar.
