Yellow Beans with Flour Dumplings

- 400 g Yellow broad beans -TK, blanched
- 1 Onion
- 2 Toes Garlic
- 1 Rawit very hot little chilli
- Salt pepper
- Butter or oil
- Some flour and cream
Flour dumplings
- 140 g Flour
- 2 tbsp Semolina
- 1 Strong pinch of salt
- 1 tsp Baking powder
- 250 ml Water
- Parsley for decoration
- Flour dumplings: Mix the flour, semolina, salt and baking powder, stir in the water with a wooden spoon until a homogeneous dough is formed. Let the dough rest for about 20 minutes. Then remove small portions of dough with wet hands and shape them into “cams”. Put the nocks in boiling salted water and let them simmer for about 5-6 minutes over a slightly reduced heat (they then float on top, it is best to cut open a nock and test it). When they are done, pour off the water and allow the cams to evaporate a little. If you like, you can sauté them in a little salted butter, which gives it a delicious taste.
- The beans: Cut the onion and garlic into small cubes and the rawit into fine strips and then sweat in hot fat, add the beans and stew with the lid closed. Season to taste with salt and pepper. Dust the beans with 1-2 teaspoons of flour and refine with cream.
- Arrange the beans on preheated plates and add a few dumplings, sprinkle with chopped parsley. Finished!
