Ingredients for 1 servings:

  • 100 g flour, 550
  • 100 g water
  • 5 g yeast, fresh
  • 1 tsp honey
  • 350 g flour, 550s
  • 250 g yogurt, 10%
  • 1 tsp, heaped salt
  • 1 tsp, levelled sugar
  • sesame
  • cumin

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 4 hours

Mix the pre-dough and let it stand for 2-24 hours. Knead the main dough together with the pre-dough slowly for 8 minutes, then let the dough rest for 30 minutes. Form a loaf and let it rise again for 40 minutes. Then spray with water and sprinkle with sesame and cumin seeds, and score the dough. Baking times preheated: 250°C (482°F) 15 minutes, 3 x steaming 200°C (492°F) 20 minutes
