Ingredients for 8 servings:
- 2 ½ kg potatoes, waxy
- 3 bulbs of garlic
- ½ cup olive oil
- 3 lemons
- 2 tbsp paprika powder, sweet
- 1 tbsp oregano, dried
- 1 tsp pepper
- 1 tsp chili flakes
- Sea salt
- 200 ml water

Peel the potatoes, quarter them lengthwise, and rinse them twice thoroughly with water to remove any starch. Place them in a 5 cm deep (35 x 25 cm) baking tray. Peel the garlic and add the whole cloves to the potatoes. Preheat the oven to 200 degrees Celsius. Add the zest of one lemon and the juice of three lemons, along with the oil, salt, and all the spices, and stir thoroughly to distribute the ingredients evenly. Pour the water in from the sides, not over the potatoes, and place the baking tray in the oven. Bake for approximately 60-70 minutes until golden brown and crispy. Remove the baking tray briefly after 45 minutes and stir the potatoes. Of course, you can bake a roast chicken with the potatoes, but I think this recipe is also delicious on its own. I like to serve it with a green salad and chili curd. Or with a delicious crusty white bread, on which I then spread the soft, caramelized garlic. The sky’s the limit! At family gatherings, this is a common side dish to all sorts of dishes. And if you’re not so garlic-tolerant, you can, of course, reduce or even omit it.
