Ingredients for 1 servings:
- 60 g brown sugar
- 90 g butter
- 1 egg(s)
- 2 egg yolks
- 1 packet of vanilla sugar
- 170 g wheat flour
- ½ bag(s) of baking powder
- 50 g cocktail cherries, or cherries, chopped
- 50 g walnuts, chopped
- 2 egg whites
- 110 g white sugar
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
English cake
Dough: Mix the sugar and butter. Add the egg yolk, egg, flour, and baking powder and knead with your hands. Spread the dough very thinly and flat on the greased baking pan. Baking pan dimensions: 23 cm x 33 cm. If you don’t have this size, either cover half a standard baking sheet and mark it with aluminum foil, or use double the amount. Topping: Beat the egg whites until stiff peaks form. Fold in the chopped walnuts and cherries, along with the white sugar, and spread evenly over the dough. Preheat oven to 180°C and bake on the bottom rack for about 25 minutes.
