Marble cake in zebra look
For the batter, separate the eggs and beat the egg yolks with the sugar and vanilla sugar until frothy. Stir in the lukewarm water and oil. In another bowl, combine the flour and baking powder and carefully stir the mixture into the egg foam. Beat the egg whites until stiff and fold in carefully. For the zebra look, divide the batter into two portions and stir the cocoa powder into one half. The batter shouldn’t be too thick, otherwise the pattern won’t form. If the batter isn’t runny enough, simply stir in 2 tablespoons of water. Place 3 tablespoons of the light batter in the center of a greased 26cm springform pan. Add 3 tablespoons of the chocolate batter on top. Repeat this process until both batters are used up. Since the batter now runs from the center to the edges, the typical zebra pattern will appear when you cut the cake. Bake the cake in a preheated oven at 160°C (fan oven) for approx. 50-60 minutes. Let the zebra cake cool in the pan and, if desired, dust with powdered sugar. Tip: To test for doneness, insert a wooden skewer into the batter and pull it out again. If no batter sticks to it, the cake is done.
