Zen Bowl Exotic with rice, salmon and fruit

Ingredients for 2 servings:

  • 250 g salmon fillet(s) with skin
  • 150 g sticky rice
  • 1 mango(s), ripe
  • 1 stick(s) avocado(s), ripe
  • 1 piece(s) passion fruit(s), ripe
  • 1 handful of coriander leaves, fresh
  • 1 tbsp seaweed leaf, freeze-dried
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 piece(s) ginger root, approx. 1 cm (if you like it spicy)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cook the rice in 1.5 times the amount of water. Sear the salmon skin-side down for 30 seconds, then continue to sear it over medium heat for 3 minutes on each side. Dice the mango, avocado, and salmon. Transfer the rice to two bowls and serve with the other ingredients. Finally, add soy sauce, sesame oil, ginger (optional), coriander, and passion fruit pulp. Guava juice goes well with the dish.
