Zucchini and broccoli pan

Ingredients for 2 servings:

  • 1 cup rice
  • 1 lime(s)
  • 5 cloves garlic
  • 25 g ginger
  • 2 tbsp vegetable oil
  • 500 g broccoli
  • 1 zucchini
  • some salt and pepper
  • some vegetable oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

with lime-ginger-garlic sauce and rice, vegan

Cook rice according to the package instructions. Juice the lime. Peel and coarsely chop the garlic. Wash the ginger thoroughly and coarsely chop it, including the skin. Blend in a blender with 2 tablespoons of oil until smooth and season with salt and pepper. Cut the broccoli into small florets. Quarter the zucchini and slice it. Heat the remaining oil in a pan and sauté the vegetables until al dente. Add the sauce and sauté for 1 minute. Serve everything on a plate.
