Zucchini and carrot patties

Ingredients for 4 servings:

  • 1 zucchini
  • 2 carrots
  • 300 ml kefir
  • 2 eggs
  • 1 cup flour of your choice (spelt, corn, millet, wheat)
  • some salt
  • some oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Wash the zucchini and carrots and coarsely grate them. In a bowl, combine the kefir, eggs, flour, and salt into a batter. Stir in the grated vegetables. Heat the oil in a pan. Drop the batter into the pan by the spoonful and fry the patties over medium heat until golden brown. Serve with sour cream or crème fraîche.
