Zucchini and cheese chicken schnitzel

Ingredients for 2 servings:

  • 400 g chicken schnitzel
  • 1 zucchini
  • 2 tomatoes
  • 1 bell pepper(s)
  • Gouda, 1 slice per schnitzel
  • some ketchup or pureed tomatoes
  • Salt or Fondor
  • paprika
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

easy and fast

Halve the zucchini. Divide one half into 4 sticks. Halve the other half and slice. Dice the bell peppers. Halve and slice the tomatoes. Arrange the zucchini slices, tomatoes, and bell peppers in a baking dish. Season with paprika. Spread some ketchup on top. Flatten the chicken breast schnitzels (I usually make 4 pieces). Season both sides with Fondor, pepper, and paprika. Place a slice of Gouda cheese on each schnitzel, then a stick of zucchini on top and roll up. Secure each with two toothpicks and place in the baking dish. Bake in the oven at 200°C (400°F) for 35 minutes.
