Zucchini and Chickpea Burger

The perfect zucchini and chickpea burger recipe with a picture and simple step-by-step instructions.

Ingredients for the rolls (hamburger buns)

  • 200 g Flour
  • 20 g Soft butter
  • 1 tsp Salt
  • 1 tbsp Sugar
  • 1 Pc. Egg
  • 21 g Yeast fresh
  • 1,2 dl Milk
  • 1 tbsp Sesame

Ingredients for the burger

  • 300 g Zucchini
  • 250 gr Chickpeas canned drained
  • 1 Pc. Fresh onion
  • 100 g Flour
  • 0,5 bunch Herbs acc. To oregano parsley chives
  • Salt
  • Pepper
  • 5 tbsp Olive oil
  • Breadcrumbs
  • Lettuce leaves
  • Tomatoes

  1. Put the flour, butter, salt and sugar in a bowl
  2. Whisk the egg. Dissolve the yeast in the milk and add to the flour with half of the egg.
  3. Knead everything into a smooth, supple dough. Cover the dough and let it rise twice as much for about 1 hour.
  4. Knead the dough well, then quarter the dough and shape it into large, smooth, flat balls. Place on baking paper and cover again for about 45 minutes
  5. In the meantime, preheat the oven to 180 degrees. Brush the rolls with the remaining egg and sprinkle with sesame seeds.
  6. Then bake in the middle of the oven for 15-20 minutes

Zucchetti and Chickpea Burger

  1. Grate the zucchini on the hash browns. Mix with 1/2 teaspoon salt, let steep for 10 minutes, drain and drain well.
  2. Drain the chickpeas, rinse with cold water, add the egg and puree
  3. Chop the onion and herbs – mix the flour with the zucchini and add to the chickpeas. Knead everything well and season with salt and pepper
  4. Cut the mixture into quarters, form a 1.5cm thick burger and turn the breadcrumbs. Then sauté

Special sauce that goes very well with it

  1. Mix 12,150 g feta cheese, 180 g Greek yoghurt, 1/2 bunch of herbs, small onions, 1 tbsp oil and season with salt and pepper
  2. Now halve the rolls and toast them in a pan with the cut surface facing down. Cover with lettuce, spread the sauce on top, tomato on top, the burger on top and the other half of the bun
  3. You are also welcome to take hamburger buns that have already been baked 😉
