Zucchini and cucumber salad with capers

Ingredients for 3 servings:

  • ½ cucumber(s)
  • 1 small zucchini, about the same amount as cucumber
  • 1 small onion(s), red
  • 30 g capers
  • 1 clove(s) garlic
  • 6 mint leaves
  • 5 stalks of flat-leaf parsley or coriander
  • 1 tsp herbal vinegar
  • 2 tbsp oil (lime oil)
  • Salt (Flor de Sal Lime)
  • ½ tsp sugar
  • pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Wash and dice the cucumber and zucchini. Finely dice the onion and finely chop the garlic and herbs. Leave the capers whole. Place everything in a bowl and make a dressing with the other ingredients. Pour this over the vegetables and let it sit for about half an hour. This is a very fresh salad that’s also delicious chilled.
