Zucchini and feta cheese strudel

Ingredients for 4 servings:

  • 1 pc. puff pastry, frozen, possibly milk
  • 500 g zucchini
  • 1 bell pepper(s), red
  • 100 g sheep’s cheese
  • 1 onion(s)
  • 1 garlic clove(s)
  • oil
  • Herbs (oregano, thyme, rosemary)
  • ½ onion(s)
  • 125 ml cream
  • 125 ml white wine
  • oil
  • Flour,
  • salt and pepper
  • chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onion, garlic, zucchini, and bell pepper, and sauté in oil. Remove from the heat and gently mix in the diced feta cheese, seasoning everything with the herbs. Line the puff pastry, spread the vegetable and feta cheese mixture over one-third of the surface, and roll up the dough. Brush the strudel with a little milk, if desired, and bake in the oven at 200°C for about 20 minutes. For the sauce, chop half an onion, sauté in oil, dust with a little flour, and pour in the white wine and cream. Reduce the sauce until creamy, season with salt and pepper, and garnish with chives.
