Wild garlic soup with cheese dumplings

Ingredients for 4 servings:

  • 2 handfuls of wild garlic
  • 2 tbsp butter
  • 2 garlic cloves
  • 1 onion(s)
  • 60 ml white wine
  • ¼ liter cream
  • some lemon juice
  • ½ liter chicken broth
  • 4 rolls, peeled
  • 2 eggs
  • 150 ml milk
  • 1 tbsp parsley, finely chopped
  • 1 small onion(s), finely chopped
  • 100 g bacon, diced
  • salt and pepper
  • 130 g cheese, grated (Gouda)
  • oil
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the soup, sauté the onion and garlic in butter, add the chicken stock, white wine, and cream, and simmer for 5 minutes. Chop the wild garlic, add it to the soup, blend finely, and season with salt, pepper, and lemon juice. For the cheese dumplings, pour milk over the diced bread rolls and let it simmer for a while. Then add the eggs, parsley, onion, cheese, and bacon, season with salt and pepper, and grate in the nutmeg. Mix everything thoroughly and let it simmer for a while. Form flat patties and fry them in a pan with oil on both sides. Serve as a soup garnish.
