Zucchini and feta fritters

Ingredients for 2 servings:

  • 1 large zucchini
  • 250 g feta cheese
  • 1 egg(s)
  • 1 tsp, leveled salt
  • 3 garlic cloves
  • e.g. coconut oil for frying
  • 100 g breadcrumbs
  • 1 tsp, leveled paprika powder
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely grate the zucchini, toss with salt, and let stand for about 5 minutes. Then place the mixture on a paper towel and squeeze out any excess liquid (to reduce the liquid). Transfer the squeezed zucchini mixture to a larger container. Crumble the feta into small pieces and add it. Then add the egg, crushed garlic, paprika, pepper, and 50g of breadcrumbs. The mixture should be soft but not runny. If the mixture is too runny, simply add a little more breadcrumbs. Form the zucchini and feta mixture into small, flat patties. Fry in coconut oil for about 10 minutes until golden brown on both sides.
