Ingredients for 3 servings:
- 1 tbsp olive oil
- 500 g minced beef
- salt and pepper
- 1 large zucchini
- 100 g cheese, grated low-fat
Instructions

Preheat oven to 200 degrees Celsius. Heat 1 tablespoon of olive oil in a non-stick pan. Brown the ground beef and season with salt and pepper. Grate the zucchini into a baking dish and season with salt and pepper. Add the cooked ground beef and mix briefly. Sprinkle with the grated low-fat cheese and bake the whole thing in the hot oven for about 20 minutes (until the cheese melts and is lightly golden brown). You can also combine it with other vegetables such as peppers, eggplant, potatoes, carrots, etc. Serve with pasta or potatoes as a side dish (if you pre-cook them, you can add them to the baking dish), but it also tastes very good on its own and is particularly suitable for a food combining diet.
