Ingredients for 1 servings:
- 250 ml oil
- 200 g sugar
- 3 eggs
- 1 tsp cinnamon
- 250 g flour
- 200 g ground almonds
- 50 g desiccated coconut
- 1 packet of baking powder
- 500 g zucchini

Whisk the oil, sugar, eggs, and cinnamon until fluffy. Mix the flour, nuts, and desiccated coconut with the baking powder and fold in. Cut the zucchini into sticks and fold in. Then spread the batter into a round baking pan. Bake for about 30 minutes at 170°C. It’s best to do the toothpick test.
