Zucchini cannelloni

Ingredients for 2 servings:

  • 750 g zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • 300 g minced meat
  • 200 g Cheddar cheese
  • 1 egg(s)
  • 50 ml tomatoes, chopped
  • 2 tsp salt
  • pepper
  • 1 tsp parsley
  • 60 g Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the zucchini, trim the ends, and slice them thinly. Peel and dice the onion and garlic, and mix with the ground beef, cheddar cheese, egg, tomatoes, and seasoning. Place a few zucchini slices next to each other, slightly overlapping, top with the ground beef mixture, and roll up in portions. Place the finished rolls in a baking dish and sprinkle with Parmesan cheese. Bake the zucchini cannelloni in a preheated oven at 180°C (fan oven) for 30 minutes.
