Zucchini Carbonara

Ingredients for 2 servings:

  • 3 zucchinis
  • 2 onions
  • 2 tsp olive oil
  • 100 g lean ham cubes
  • 8 tbsp vegetable broth
  • 4 tbsp Parmesan, freshly grated
  • 2 m.-sized eggs
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the zucchini and cut it into thin spirals using a spiralizer. Peel and finely dice the onions. Heat oil in a pan over medium heat. Briefly fry the onion and ham cubes. Deglaze with stock. Add the zucchini spirals and cook for about 5-6 minutes. Mix the Parmesan cheese with the eggs, season with salt and pepper, and fold the mixture into the zucchini spirals. Stir until set. Season with salt and pepper to taste and serve.
