Ingredients for 2 servings:

  • 1 m.-large kohlrabi
  • 1 m.-sized onion(s)
  • n. B. raw ham, diced
  • 4 eggs
  • 50 ml milk
  • 1 pinch(s) salt and pepper
  • n. B. spice(s), e.g. nutmeg and chili flakes
  • possibly caraway

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Peel the kohlrabi, halve it, slice it, and cook it in lightly salted water for about 5 minutes. Add a little caraway seeds to the water if desired. Dice the onions and sauté them in a pan with a little oil and some diced ham. Then add the kohlrabi, season with salt and pepper, and fry until golden brown. Set the vegetables and ham aside. Season the eggs with milk, salt, pepper, and other spices to taste. I like to add a little nutmeg and chili flakes, for example. Whisk the eggs, pour them into a pan, and let them set. Then spread the fried kohlrabi on half of the omelet and fold the omelet over. This dish contains approximately 255 kcal per serving. Fat: 12.3 g, Carbohydrates: 15.8 g, Protein: 16.6 g
