Zucchini chips

Ingredients for 2 servings:

  • 250 g zucchini
  • 2 eggs
  • 100 g cheese, grated
  • 25 g Parmesan, grated
  • e.g. oregano
  • e.g. basil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Preheat the oven to 200°C (top/bottom heat). Grate the zucchini. Place it in a bowl with a little salt and let it sit for about 15 minutes. Press it through a kitchen towel to remove as much liquid as possible. Place the zucchini in a bowl with the egg, Parmesan, and 80g of the grated cheese. Add the oregano and basil. Season with salt and pepper and mix everything well. Transfer the zucchini mixture to a baking sheet lined with baking paper, smooth it out with a spatula to a depth of about 0.5cm, and bake in the oven for about 15 minutes. Sprinkle the remaining cheese over the top and bake for another 10 minutes. Remove from the oven, let it cool, and then cut into chips.
