Zucchini chutney from Rosinenkind

Ingredients for 1 servings:

  • 1 kg zucchini, cleaned and cut into small pieces
  • 5 onions, peeled and quartered
  • 6 cloves garlic, peeled and crushed
  • 250 ml vinegar, white, if necessary 300ml
  • 250 g brown sugar
  • 70 g raisins
  • 4 Piri Piri
  • 1 piece(s) ginger (hazelnut-sized)
  • 1 tbsp curry
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tbsp turmeric
  • 1 tbsp paprika powder
  • 1 tbsp salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Indian-inspired

Put all ingredients except the raisins into a large pot and simmer until soft, season with spices, roughly puree with a hand blender, add the raisins, bring back to the boil, season again if necessary, and fill the prepared twist-offs to the brim while still hot and allow to cool.
