Ingredients for 1 servings:
- 1 kg zucchini, cleaned and cut into small pieces
- 5 onions, peeled and quartered
- 6 cloves garlic, peeled and crushed
- 250 ml vinegar, white, if necessary 300ml
- 250 g brown sugar
- 70 g raisins
- 4 Piri Piri
- 1 piece(s) ginger (hazelnut-sized)
- 1 tbsp curry
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tbsp turmeric
- 1 tbsp paprika powder
- 1 tbsp salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Indian-inspired
Put all ingredients except the raisins into a large pot and simmer until soft, season with spices, roughly puree with a hand blender, add the raisins, bring back to the boil, season again if necessary, and fill the prepared twist-offs to the brim while still hot and allow to cool.
