Zucchini cream cheese rolls

Ingredients for 4 servings:

  • 4 m.-large zucchini
  • 2 garlic cloves
  • 3 tbsp oil
  • 1 bunch of fresh herbs
  • 1 onion(s), red
  • 200 g goat’s cheese
  • salt and pepper
  • chives
  • 1 tbsp pepper, green

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini, cut lengthwise into ½ cm thick slices, and fry in hot oil until light brown. Season with salt and pepper, and crush the garlic, tossing well. Finely chop the onion, herbs, and pepper, and mix with the cheese. Shape the mixture into balls and wrap them in the zucchini slices, then secure with chives.
