Zucchini Cucumber Relish

The perfect zucchini cucumber relish recipe with a picture and simple step-by-step instructions.

  • 600 g Zucchini, pitted
  • 500 g Cucumber, pitted
  • 250 g Onions
  • 30 g Fresh ginger
  • 200 ml Apple Cider Vinegar
  • 200 g Brown cane sugar
  • 4 piece Garlic cloves
  • 1 tbsp Salt
  • 0,5 bunch Finely chopped parsley
  1. Cut the ends off the zucchini and cucumber, halve the fruit and remove the stone. Peel the onion. Then cut everything into about 0.5 cm thick cubes. (The best and fastest way is with a kitchen helper … here Nicer Dycer)
  2. Peel the ginger and garlic and dice very finely.
  3. Put the diced vegetables in a large saucepan, add the remaining ingredients except for the parsley and mix everything well. Bring to the boil and simmer on a low heat until the vegetables are bitten.
  4. In the meantime, pluck the parsley from the stalk and cut into small pieces. Then stir into the vegetable mixture.
  5. Then we fill everything into twist-off glasses provided. after about 2 weeks the relish is pulled through.
