Ingredients for 4 servings:
- 3 m.-large zucchini
- ½ tsp salt
- 1 pinch(s) pepper, black
- 2 pinches of curry powder
- 4 tbsp grape seed oil
- 2 tbsp balsamic vinegar, light or lemon juice
- 1 tbsp honey
- 1 clove(s) garlic, squeezed (optional)
- 1 tbsp fresh herbs, finely chopped

Julienne or coarsely grate the zucchini, mix with all the other ingredients, let it sit for a moment, and enjoy. Curry gives this salad its distinctive flavor and color. Our summer favorite! Tip: The quantities are guidelines only; adjust according to your taste and the size of the zucchini. If you prefer a creamier texture, use 2-3 tablespoons of 10% yogurt or sour cream instead of the grapeseed oil.
