Zucchini Frittata

Ingredients for 4 servings:

  • 100 g flour
  • 1 tsp baking powder
  • 2 eggs, whisked
  • 50 ml milk
  • 300 g zucchini
  • 2 tbsp thyme, fresh
  • Salt and pepper from the mill
  • 1 tbsp olive oil for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Sift the flour into a large bowl, make a well in the center, and add the eggs, then gradually mix in the flour with a wooden spoon. Slowly add the milk while stirring constantly and mix until a smooth batter forms. Meanwhile, wash the zucchini. Line a bowl with paper towels and rub the zucchini into the bowl; the paper towels will absorb some of the zucchini liquid. Add the zucchini and thyme to the batter, season with salt and freshly ground pepper, and mix thoroughly. Heat the oil in a cast-iron skillet. For medium-sized frittatas, add 1 tablespoon of the batter mixture to the pan with hot oil and cook each frittata for about 3-4 minutes on each side.
