Zucchini fritters

Ingredients for 2 servings:

  • 300 g zucchini
  • 150 g potatoes
  • 1 large onion(s)
  • 2 m.-sized eggs
  • 1 tbsp Flour (Type 1050 or 405)
  • 2 tbsp whole wheat breadcrumbs or oat flakes
  • Sea salt
  • Pepper, black from the mill
  • Cold-pressed oil for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, trim, and coarsely grate the zucchini and potatoes. Peel and finely dice the onions. Whisk the eggs in a bowl, add the prepared ingredients, flour, and breadcrumbs. Season with salt and pepper, and mix thoroughly. Add a little oil to a nonstick pan and fry about 12 small fritters until golden brown on both sides. They’re especially delicious as a side dish to roasts or with tzatziki.
