Ingredients for 4 servings:
- 500 g zucchini
- 1 onion(s)
- 4 tbsp olive oil
- 50 g sheep’s cheese, firm
- 2 sprigs of mint, fresh
- 50 g wholemeal wheat or spelt flour
- 2 eggs
- Sea salt
- Black pepper, freshly ground
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash and dry the zucchini, remove the stems and flower ends, and finely grate. Place the grated zucchini in a kitchen towel and squeeze out any excess liquid. Peel and grate the onion. Heat 1 tablespoon of oil in a pan and fry the zucchini and onion over high heat until the liquid has evaporated. Transfer the vegetables to a bowl. Grate or finely crumble the feta cheese. Wash the mint or dill and finely chop the leaves. Add both to the zucchini mixture along with the flour and eggs and mix thoroughly, season with salt and pepper. Be careful, the cheese is already salty! Heat the remaining oil. Place small heaps of the zucchini mixture into the pan and fry over medium heat for about 7 minutes, then turn and fry for about 3 minutes until done. Serve hot or cold. Serve with sesame potatoes.
