Ingredients for 4 servings:
- 800 g zucchini (weighed after cleaning)
- 4 cloves garlic
- 1 bunch parsley, flat
- 4 eggs
- 10 tbsp flour (whole grain)
- ½ pack of baking powder
- 200 g cheese, grated (Emmental)
- Salt
- Olive oil, for frying
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Coarsely grate the zucchini (use small zucchini whole, remove the seeds from the large ones). Drain any liquid that may have formed (this makes the fritters easier to bake). Finely chop the garlic cloves and parsley. Mix the eggs, flour, baking powder, and salt into a smooth batter. Add the prepared vegetables and grated cheese and mix well. Fry small fritters in hot oil and drain on kitchen paper. The specified amount is intended as a main meal. However, you can also make only half and serve it as a side dish with roasted meat. Or, instead of meat, serve with a green salad for a completely vegetarian meal.
